2 TBLS Chia Seeds
½ Cup Canned Light Coconut Milk (I like Trader Joe’s brand)
1 TSP Alcohol Free Pure Vanilla Extract
Cinnamon to taste

Cinnamon to taste
Mix all ingredients and place in refrigerator until pudding is set. Top with your favorite fruits and/or nuts.
I like to place my in a bowl and leave in the fridge overnight, so it’s ready when it’s time for breakfast. You can also place in in the fridge until it sets up- around 30-45 minutes.I top with any fruit I have in the house. You can make so many different variations, which is probably why I like it so much! My favorite toppings are raspberries, blueberries and a sprinkle of unsweetened coconut flakes (pictured above).
Kale Chopped Salad with Almond Crusted Chicken and Lemon Garlic Vinaigrette

1 Head of Kale, massaged1 Granny Smith Apple
1 Large Haas Avocado
2 Heirloom Tomatoes
3 Purple Carrots (my new fave!)
1/4 Cup Organic Golden California Raisins
Almond Crusted Chicken Breasts
1 LB Chicken Breasts
1 Egg, Whisked
Almond Meal
Soak Chicken in egg batter, the cover with Almond Meal. Pan fry in light EVOO or Coconut oil.
Lemon Garlic Dressing
The juice of 1 Lemon
1TBLS EVOO
3-4 Cloves, Fresh Garlic
Salt and Pepper to taste
Blend in food processor until creamy. Serve.
"Pasta" with Grilled Chicken and Asparagus

2 chicken breasts, diced and marinated in EVOO, crushed garlic, salt and pepper
1 Bundle of Asparagus, spears cut into thirds
1 package of Explore Asian Mung Bean Noodles
1 TBLS EVOO
Crushed Garlic
** You can also toss in 1 Heaping TBLS of Pesto in place of EVOO ( I found a clean version at Mother's Market)
Pan grill chicken. Boil noodles. When noodles are almost done cooking, throw in asparagus for remainder of the time. Drain noodles/asparagus. Add chicken, EVOO, garlic to noodles and mix. Light salt and pepper to taste. Serve immediately.
Cranberry Almond Coconut Breakfast Cookies

1 Large Banana Smashed or Pureed
3 Organic Eggs
1 Cup Multi-grain Hot Cereal (I use Country Choice)
1 Cup Unsweetened Cranberries
1/2 Chopped or Crushed Almonds
1/4 Cup Unsweetened Shredded Coconut
Mix all ingredients. Bake on parchment lined baking sheet at 375° for 13-15 minutes or until cookies no longer look gooey. YUM!
